Ruby's Taqueria

Yes, another Mexican post!  Sometimes I can't help it, I just get on these tacos runs, plus they are cheap eats.  Ruby's Taqueria is in the most obscure part of Sunnyvale.  Its set in a small plaza next to the freeway, but its so hidden you would never know its there.  A Mexican bakery also named Ruby's is also located in the same plaza, but it was closed so no sweet for me this time.
So most people I know think that Taco Bell invented the gordita, but so not true.  Not every taqueria sells gorditas, but the ones that do are hard to resist.  It looks almost like a fried sandwich made with tortillas and stuffed with your choice of meat, lettuce, and cheese.  For most of Ruby's items, the meat (and non meat) choices are:  carne asada (steak), pastor (pork), tinga (spicy chicken), birria (goat), lengua (tongue), chorizo (spicy sausage), chicharron (fried pork skin), pollo asada (grilled chicken).  Here, the corn tortilla of the gordita are deep fried so they create a puffy shell and then stuffed with my choice of meat (pastor), beans, lettuce, and cheese.  The shell was on the soggy side and the pastor meat was disappointing with very little flavor.

I have to confess a lifetime of taco eating and I've never once heard of a vampiro taco.  A little research and I found that vampiro tacos are often associated with Matzatlan food.  The corn (or flour) tortillas are griddled to a crisp and then piled very heavily with meat (pastor this time for me), melted cheese, cilantro, onions, and guacamole.  It doesn't look like much, but looks are deceiving.  The griddling of the tortillas and the melted cheese make these vampiros better than your average street taco.  The griddling gives the taco a lot of texture and that much needed crunch when eating tacos.  Also, one taco is quite filling due the copious amounts of meat and ingredients and of course, everything is always better with avocado (in this case, guacamole).
